- Two bay leaves

- Blend until the required thickness is reached. After 15 minutes of simmering, strain.

Clean newly harvested jaboticaba. The saucepan fruit should be added. Fill the fruit with water to just below the surface. While stirring and mashing the fruit, bring to a boil. Use a chinois or jelly bag to strain fruit. Squeeze by hand the residual pulp when it has cooled. This will add more flavor and color to the strained juice. Juice should be measured into eight cups; any extra can be frozen for later use. Juice should boil. Add four pectin boxes, then bring back to a boil. Return to a boil after adding 8 cups of sugar. Take out of the fire and put into sterilized jars. Jars should be sealed and boiling for 20 minutes with at least 2 inches of water covering them. Extract from water and allow to cool.
