Instructions:

Step 1 - Get your rambutans ready

  • If using canned rambutans, give them a good rinse to remove extra sugar
  • For fresh rambutans, look for a red-orange skin for the ripest and sweetest ones
  • To open them, score the outer shell with a knife without cutting through. Make a slit
  • Insert your finger, tear the skin open, and pop out the white, grape-like fruit

Prep Time: 15 mins | Total Time: 40 mins

Ingredients:

  • 1 bunch lemongrass (bruised)
  • 2-3 kaffir lime leaves
  • 200ml low-fat cream
  • 100g basmati rice (washed, drained)
  • 150ml 2% milk
  • 1 tin sweetened condensed milk (approx 400g)
  • 1 tin coconut milk (400g)
  • 1 dragon fruit (diced with pink membrane)
  • 200g rambutans
  • Simple Sugar & Lime Syrup:
    • 1/8 cup water
    • 1/4 cup sugar4

Instructions:

  • Gently heat low-fat cream, add lemongrass and lime leaves, and let it infuse covered in the fridge overnight
  • Microwave rice for a minute, stir, and repeat until dry. Grind and stir into 150ml cold milk; set aside
  • Simmer coconut milk, add condensed milk, and stir. Add infused cream and mix well
  • Mix ground rice with reserved cold milk. Take off the heat, combine rice mixture thoroughly, and put it back on simmer
  • Cook uncovered on low heat for 30-45 mins until thickened, stirring often to prevent lumps
  • Cool, ladle into serving dishes, and chill covered for up to 3 days
  • Toss fruit in simple sugar and lime syrup. Serve over the pudding if desired
