What is star fruit?
Star fruit, also referred to as Carambola, is a tropical fruit of Averrhoa carambola, a species of tree native to Indonesia, the Philippines, and throughout Malaysia. It is cultivated in many parts of the world to harvest its fruit.1 In cross section, it resembles a star due to its five prominent longitudinal ridges, but in rare instances, it can have as few as four or as many as eight. Star fruit is dark green when unripe, but as it ripens, its thin skin turns shiny yellow.
The flesh is translucent and light yellow to yellow with a mild sour flavour that makes it popular in several dishes.2
Starfruit is typically oval-shaped and 3 to 5 inches long. Star fruit is thought to provide a variety of beneficial medicinal and nutritional benefits. It serves a variety of dietary and therapeutic purposes. Minerals and natural antioxidants are thought to be abundant in star fruit. The star fruit can be used to make salads, pickles, drinks, or just eaten raw. Many nations classify it as an herb. It can be used to clean utensils as it aids in rust removal. Conversely, nephrotoxicity and neurotoxicity associated with star fruit consumption have been documented in case reports and case series published in the literature.1
Nutritional components of star fruit
Star fruit is rich in various nutrients such as vitamins, minerals, dietary fibre, and antioxidants. Its nutritional composition includes following components:
- Vitamins: Star fruit is a potent source of vitamin C, with around 52.8 milligrams per 100 grams of fresh fruit which is 52% of the recommended daily intake (RDI). According to USDA Food Data Central, vitamin C is a significant antioxidant that enhances collagen synthesis and immune system performance
- Minerals: Star fruit has minerals like potassium (3% of the RDI per 91 grams of fresh fruit), which are necessary for heart health and preserving the body’s fluid equilibrium.
Additionally, it has trace levels of magnesium (2% of the RDI) and calcium, both of which are critical for healthy bones and muscle function - Dietary fiber: Star fruit is rich in dietary fiber, with approximately 2.8 grams per 100 grams of fresh fruit. Dietary fiber supports digestive health, promotes satiety, and helps regulate blood sugar levels3
- Antioxidants: Antioxidants contained in star fruit, such as flavonoids and polyphenols, aid in shielding cells from the oxidative damage caused by free radicals. - Other nutrients: Star fruit also provides small amounts of other nutrients such as protein (1 gram), folate (3% of the RDI), vitamin A, and vitamin E, Vitamin B5 (4% of the RDI), Copper (6% of the RDI) as well as trace elements like zinc and iron3 Despite its relatively low nutrient content, star fruit is very nutritious considering its low calorie count as it contains only 28 calories and 6 grams of carbs per serving1
- Healthy plant compounds: Star fruit contains beneficial plant compounds such as quercetin, gallic acid, and epicatechin. These compounds have powerful antioxidant properties and may reduce the risk of fatty liver and cholesterol in animal studies. Some evidence suggests that the sugars in star fruit may also have anti-inflammatory effects

Star fruits are commonly used in Ayurvedic and Traditional Chinese Medicine (TCM), and some of the clinical conditions they are used for include the following: fever, cough, diarrhoea, chronic headache, inflammatory skin disorders (eczema), and fungal skin infections. The ripened fruit is also used in some countries to treat bleeding hemorrhoids.1
What is detoxification and how star fruit works as a detoxifier in our body?
Detoxification refers to the body’s natural process of eliminating or neutralizing potentially harmful substances, like toxins and pollutants, which can originate from various sources such as the environment, diet, and internal bodily functions.4
Star fruit, also known as carambola, is believed to possess detoxifying properties owing to its abundant antioxidants, particularly flavonoids and vitamin C. These antioxidants are renowned for their ability to counteract free radicals and assist in the body’s inherent detoxification processes. The antioxidants found in star fruit, such as flavonoids and polyphenols, play a role in protecting cells from oxidative damage caused by free radicals.
The potential health benefits of star fruit, including its anti-inflammatory and detoxifying effects, may be attributed to these antioxidants. 4
Star fruit exhibits potent antioxidant properties, effectively scavenging reactive oxygen species (ROS) and various free radicals. It contains high levels of flavonoids, proanthocyanidins, vitamin C, β‐carotene, saponins, alkaloids, tannins, and gallic acid.
Additionally, it can inhibit the activity of cytochrome P450 3A (Hidaka et al., 2006). Various studies have examined its antioxidant capacity through biochemical analyses. Shui and Leong (2004) identified polyphenolic antioxidants in star fruit using liquid chromatography and mass spectrometry, attributing the main antioxidant action to phenolic compounds such as L‐ascorbic acid, epicatechin, and gallic acid in gallotannin form. In another study by the same team, the residue of star fruit after juice extraction was found to contribute around 70% of the total antioxidant activity.
A study investigating the antioxidant effects of common Mauritian exotic fruits found A. carambola to be a significant source of phenolic antioxidants with potent health benefits in humans. In an assessment of fruits from an Aizawl market in Mizoram, India, A. carambola demonstrated moderate antioxidant activity. Chemical analysis of A. carambola leaves revealed a significant correlation between the antioxidant activity of the extract and its phenolic content. Although most findings are from in vitro studies, a human study involving 27 elderly individuals showed significant improvements in antioxidant status following the consumption of 100g of star fruit juice twice daily for 4 weeks. This resulted in increased total antioxidant capacity, reduced levels of malondialdehyde and protein hydroperoxide, and significantly elevated levels of vitamins A and C.1
In a study published in the Journal of Agricultural and Food Chemistry in 2010, researchers explored the antioxidant properties of star fruit. They observed significant antioxidant activity in star fruit extracts, suggesting potential benefits in combating oxidative stress and supporting detoxification processes in the body.4
Additionally, a review published in the journal Food Chemistry in 2017 emphasized the potential health advantages of star fruit, particularly its antioxidant and detoxifying properties. The review underscored the high polyphenol content in star fruit, which contributes to its ability to shield against oxidative damage and support detoxification pathways.5
